First I need to apologize for the huge lack of photos, but I did not set out to create a recipe worth sharing. Truth be told, I just wanted and needed a quick dinner last night, so I turned to the ole smoothie-in-a-bowl. When I took my first bite, I decided I should share my concoction with you all so that you too could enjoy this tasty and interesting mix!
Ingredients:
1/2 c plain Greek yogurt
1/2 c milk of choice
1/4 c pure pumpkin (I’m partial to Libby’s)
1 oz/1 c baby spinach
1/2 ripe pear, cored & cut into chunks
1/4 c frozen blueberries
1 steamed baby beet
Directions:
Add all ingredients to your blender and whir away until it reaches a smooth consistency. Top with ground flaxseed, peanut butter, hemp hearts, etc. Anything that your heart desires! I added a piece of crystallized ginger after I snapped this photo. I hope you enjoy it for a great breakfast or simple dinner too!
Was the best steamed intentionally (better nutrition), or is it a flavor/texture preference? I use raw beets often, but maybe I shouldn’t?

For texture! Matt was adorable and searched high and low recently for organic steamed vacuum-packed beets in the produce section. If I were to start with fresh beets, I’d peel and steam them so that they would be soft enough to blend. Great question!
