Reliving the Weekend

I hope you all had a wonderful weekend! I went to the store and did some coupon shoppin’ and stocked up on many great foods. I also finally got us a box of LOVE Grown‘s Bats and Boos!

Matt made an awesome breakfast on Friday. I love his creativity! Scrambled eggs with Libby’s pumpkin added and sandwiched between Van’s gf ancient grain waffles then topped with Fage 2% plain, Manitoba Harvest hemp hearts, banana sliced, pb, and maple syrup.

Friday afternoon was just gorgeous. I had to pop by the house on my lunch break and couldn’t resist snapping another photo of our view. It will never get old.

Friday dinner was quite amazing, and we both loved it. I sautéed together cooked Ancient Harvest Super Grains gf pasta with mixed greens, organic canned cannellini beans, roasted Brussels sprouts/rutabaga/carrots, roasted red pepper spread, and freshly shredded parm.

My twin sister got to stay the night with us and then she and I had a “twinkie day”, and it was completely perfect! Of course we had to snap a twin sis photo. 👯

We first went by K Brew for our delicious caffeine – Pumpkin Pie Latte for me and cold brew for Kaci. The owner of Vagabond mobile boutique has been very successful and will be opening her own boutique in a brick and mortar storefront! So this weekend she had a huge sale, which of course we couldn’t miss. After finding incredible pieces, we hopped down to the farmers market to shop for birthday gifts for our friend, step-mom, and her boyfriend.

I chose to have my brunch/lunch from Just Ripe. They recently did some menu and store renovations and reopened this month.

I chose their “Spinny Sandwich” and was able to save half of it for Sunday’s lunch.

It hit the spot!

I’ve been wanting to try a delicious baked good from Sugar Mama’s Bakery for a while now. It was a difficult decision to make, but I went with their flourless chocolate chip peanut butter cookies. I enjoyed one last night with a simple banana smoothie, and it was heavenly.

We did our final shopping at Fig and Company, and they have the cutest decor! I’m completely against Christmas shopping this early, but I found two gifts that were too perfect to pass up.

Matt and I had an awesome double date at Bonefish Grill Saturday night with two of our best friends. I quickly changed into my new tunic, long button down, and gorgeous statement necklace from Vagabond before we met up with them.

I wish we could’ve snapped a group photo! We had a blast.

Saturday is my favorite day of the week, but Sunday brunch with Matt is one of the highlights of my week. I love stumbling around in the kitchen with him, taking it slow, and trying new creations.

I got this idea from a post shared by Healthy People Culinary Program on Fb written by Food and Wine. We served ours with gf multigrain toast, a fresh navel orange, and pour over coffee for me / French press for Matt.

After cleaning our whole place, I met with Kaci at her West YMCA location. I got cleaned up at her place, ran a few final errands, then whipped together another quick but very delicious dinner. I’ll share the recipe tomorrow!

I finally printed a photo for our pretty frame that was a sweet birthday gift from one of my best friends.

I’m thankful for another amazing weekend!
