Quesadilla With a Twist

I had a busy Thursday evening from getting my hair freshly cut along with completing a consultation with a physical fitness instructor at the Y for personal training. I’m definitely looking forward to pushing myself and learning new things!

Matt was an absolute sweetheart and did some grocery shopping and then made our amazing dinner. He had it all ready when I arrived home.

We decided to make a vegetarian quesdailla, and he took it to the next level. He filled two gf tortillas with our leftover sautéed peppers, mushrooms, onions, and garlic; kale and collard greens added to the pan as he warmed the veg; and roasted spiced carrots and parsnips. He used my leftover cheese from The Orangery  along with additional mozzarella. We dipped it in salsa and guacamole, and he added Greek yogurt after I snapped this photo. It hit the spot perfectly!
