I hope everyone had a wonderful day! Backing up to Thanksgiving Eve, we decided to treat ourselves to sushi and a salad from Whole Foods before we began cooking some of our dishes.
Thanksgiving isn’t the same if I don’t have my grandmother’s cornbread dressing. I used red onion instead of yellow, added carrots, and made it gluten free, but it still is true to the original.
Matt and I chose to cook just the turkey breast, but we both thought it came out so amazing and juicy!

We were so very pleased with how well our meal came together! The turkey was in no way dry or tasteless, Matt made excellent herb gravy from scratch, the dressing and cranberry sauce was nostalgic, and the garlic chili maple roasted butternut squash and Brussels sprouts with freshly crumbled blue cheese and pom seeds hit the spot.
For dessert, I made a variation of this recipe by using Wild Friends Gingerbread Peanut Butter, Love Grown Foods Super Oats, and organic coconut. I omitted the maple syrup and spices, and then I froze them so that they would hold their shape better. I enjoyed mine with a dollop of Fage, fresh fruit salad, an apple, and Tazo Vanilla Caramel Chai with frothed Cruze and local honey. Matt mixed his into Fage and had fruit and tea as well.
This morning, I made a simple apple smoothie and added the pumpkin peanut butter bites with a sausage on the side. Matt’s creation was too good not to share. He warmed dressing and had it on a bed of mixed organic greens with tomato basil goat cheese, an over easy egg, sausage, and a kiwi that didn’t make the photo.
We both have leftover turkey sandwiches complete with cranberry sauce and sharp white cheddar along with carrots and steamed green beans on the side. The leftovers are almost as enjoyable as the dinner itself!
