Thankful is an Understatement

This past birthday weekend was one of the very best, if not the very best, I’ve ever had! I certainly felt so loved and appreciated by my family and friends.

Friday evening, Kaci and I FaceTimed so that we could “see” each other on our birthday. There’s no one else I’d rather share my special day with than her!!

For my birthday dinner, we had a lovely salad topped with tuna, dill, turmeric, lemon habanero-infused olive oil, and a perfectly cooked over easy egg thanks to Matt.

He picked up a loaf of focaccia on Thursday from Benefit Your Life on Thursday, so we each enjoyed a slice with saute-steamed green beans.

The weather was so perfect, and we were able to enjoy time on our front patio after dinner. That view ❤

We also took each of our purr-babies outside on supervised patio time. They loved it!

We played on SnapChat for a minute -it’s so weird but funny!

For my dessert, I had Fage with a clementine, pumpkin seeds, some ground flaxseed, Panda PB Puffs, and a few mini Enjoy Life Foods chocolate chips.

Saturday began with an egg-cellent breakfast complete with steamed spinach, fluffy cheesy scrambled eggs, avocado, and a smoothie topped with Purely Elizabeth grain free granola. I was lucky to snag it at a great price at TJ Maxx.

I tidied up our place and then got myself ready for a really fun day. Old Navy romper, Madden Girl sandals, and my cute TN necklace.

Kaci and I met up to enjoy our free birthday donut at Maker’s Donuts! It was tough to decide, but I chose their churro and upon my first bite, I knew it was the right choice. I loved how the cinnamon sugar stuck to my lips. Mmm

We snapped a photo together before she left for the lake, and I left to visit the Lavender Festival in Oak Ridge.

There were a lot of people in attendance, and I loved visiting “my old stomping grounds.” 🙂

I continued to make my way around the booths, and there was a lot of really fun handmade items for sale. I have always loved this fountain, so I had to stop and take a photo.

The window display of Southern Bliss Boutique immediately caught my eye, so I decided to check out what they had to offer. I tried on two dresses and decided to get this beautiful orange one with laser cutouts. I’m wearing it today. 🙂

Once I finished browsing, I decided to swing by Jim’s Off-Road Center. Jim passed away several years ago, and his father passed away last fall. His signage is still up, but the building remains for rent. This is the exact place where Matt and I met by chance almost exactly 11 years ago! I wish we could’ve taken some engagement photos here, but it’s not what it used to be, of course. It made my heart happy to stop here even for just a moment to reflect.

I went home to feed the babies and eat a snack-y lunch myself. Kaci surprised me with my own Chaco wristwrap as well as two cute tea towels!

After stocking up at Aldi, I put together our dinner. It included our whole baked chicken with onion and garlic, salad with roasted seasoned green beans and tomatoes, and melted mozzarella and red pepper spread over focaccia.

Matt has saved all of my cards and notes to him through the years as well as little mementos. He brought the bag home from where he had kept it at his dad’s, and I had so so much fun reading the notes and reliving our memories! We were both laughing at my “emoticons” in the notes before they existed in text. That was one of the best gifts he could give me.

Kaci and Drew were able to come over and spend time with us on Saturday evening, and we all had a blast laughing and hanging out together!

Matt was awesome and elected to get up and feed the babies early Sunday morning when they wouldn’t take no for an answer. 😉 Later when we woke up for the day, we did so with all three piled in bed with us!

We had a smoothie bowl and then leisurely enjoyed our coffee on the front patio. I purchased our movie tickets to see Finding Dory with a movie gift card that we had. I’ve been waiting to see Finding Dory on my birthday weekend ever since they announced the release date!

I spotted these flowers in the field around our house, and I thought they were really pretty. I asked one of my friends, who is educated in agriculture, what they were. She told  me they were chicory flowers. Such a beautiful pop of blue!

Once ready, we had to take a few photos together outside. It’s become a tradition you could say. Haha Squinty, but I love it.

We each started with their mixed seaweed salad.

Then we split three rolls, one of which we ordered with brown rice. They were all so unique and delicious!

Since we had finished lunch early, we decided to browse around Bearden Antique Mall.

Then we began making our way over to the theater. I couldn’t help myself but to get a photo with the poster. Matt told me to look as though I were chatting with Dory. Bahaha love it!

Although we both still love Finding Nemo more, the movie was still so cute! My dad was awesome and surprised me with an Amazon gift card. Right after the movie I ordered a Dory tank top from Amazon.

We needed coffee, so we stopped by Earth Fare before leaving Turkey Creek. We finally found a Superfoods LaraBar!

For Father’s Day festivities, we gathered at his brother and sister-in-law’s house. I quickly put together this salad for us. It contained romaine, radicchio, mixed greens, strawberries, blackberries, mozzarella, pumpkin seeds, leftover roasted green beans and tomatoes, and infused olive oil.

We split half a sweet potato, and he had some of a steak his dad grilled. We’ve saved the rest to enjoy some this week. We went on a walk around their neighborhood, and it was just what I needed. I love evening walks because they can help you digest, unwind, chat, and enjoy each other’s company. His mom snapped this photo while we were all relaxing after dinner.

We had a small dessert and got ready for Monday after we returned home. We both also mourned the fact that the weekend had come to an end. Always such a bummer.

For breakfast this morning, I had overnight oats in a nearly empty PB jar. Matt made this incredible dish that included spinach, sauteed red cabbage, garlic herb basil cheese, focaccia, two over easy eggs, and blackberries. When he cooked the eggs in the pan after the cabbage, it turned them a beautiful blue.

He was so generous and gave me his first bit. It was awesome!

I say it so often, but how I wish I could go back and relive the weekend all over again! The best I can do is write this post and come back anytime I want to be reminded of how amazing my 28th year has started.
