Erin, who writes for Well Plated, has many amazing banana muffin/bread recipes on her blog. I made a version this past spring that Matt and I actually included in our engagement photos! I brought them along just as a snack then decided we should include them in our shoot. 🙂

One of Erin’s most sought-after recipes is for Blender Banana Oatmeal Muffins. I specifically set aside two bananas in our basket of apples to ripen them enough to be included in this recipe.
Here was the starting line up. I didn’t have enough old fashioned oats, so I used a combination of them plus LOVE GROWN FOODS Super Oats. The addtion of chia and quinoa flakes amped up the protein and fiber even more.
It’s so easy. Dump, blend, fill muffin tin, bake. Easy!
All nicely blended. The batter smelled so good!
I coated the liners with coconut cooking spray then filled each evenly.
15 minutes later, I pulled them out of the oven. They do begin to deflate quickly, but that doesn’t impact their flavor.
In order to cool them properly, you will want to transfer them to a wire rack.
This morning, I enjoyed mine with peanut butter and a side of Greek yogurt topped with fresh mango, strawberries, blackberries picked from our friend’s garden (!), and a sprinkle of granola.
