On a Dark & Stormy Night {Blue Apron Review}

Thanks to Anne of Fannetastic Food, I was able to order our first box from Blue Apron at a great discount! Since we were out of town last week, I skipped that menu and opted to receive our first today.

On deck tonight was Spiced Shrimp and Pearl Couscous. Unfortunately, given Matt’s Celiac Disease, we could not use the couscous. Instead, I substituted quinoa and will be using the couscous for two other meals for myself.

I made sure to stay true to the recipe and not allow myself to make any changes aside from the quinoa and by adding a squash.

It had been far too long since we’d enjoyed shrimp! These hit. the. spot.

Sometimes the best aromas are from simple ingredients. The sautéing vegetables smelled so good!

After adding the tomato paste then verjus rouge, the shrimp was sautéed. Quinoa and butter were tossed to warm and melt. Parsley for garnish. I need to keep fresh herbs on hand way more often! {I found this towel at, of all places, Wal-Mart. I think it’s adorable!}

We both thoroughly enjoyed this meal and are looking forward to cooking and eating our other two meals from this shipment!
