Today marks two things: my one year anniversary at my job (this past year has flown by!) and the fifth day into the 10 Day Salad Challenge led by Brittany of Eating Bird Food. I already love making various types of salads for quick lunches, but this challenge has made it even more fun! I love having something to work towards. As Brittany has outlined, having at least one meal-sized salad daily is a wonderful way to ensure you consume a variety of vegetables, healthy fats, whole grain carbohydrates, and quality protein. Here are my first four entries, and *I’ll pop back in later to share my creation for today’s lunch.
