I want to start by saying I hope you all had a fabulous weekend! I believe I packed mine full of fun and productivity, so let’s start from the top. Friday’s breakfast included my leftover flatbread with goat cheese, bacon, blackberries, and balsamic glaze. I treated myself to lunch at a local adorable restaurant on Thursday, and I saved part of it. I enjoyed with two fluffy scrambled eggs over spinach with avocado. Some kitty bathing going on in the background, haha.
Matt had one savory breakfast burrito with our last waffle topped with fruit, spices, maple, and Fage Greek yogurt.
For dinner, I made us “power bowls” including chickpeas, beets, baked cabbage, quinoa with marinated artichoke hearts, and a dressing I made using inspiration from one of Brittany’s recent posts. Tahini, apple cider vinegar, lime, garlic, whole grain mustard, salt and pepper. I have to say my bowl also is inspired by Brittany’s latest Vegan Power Bowl. 🙂 She has fabulous recipes!
Dessert included a cinnamon sugar muffin crumbled over yogurt with a piece of dark chocolate.
Rachel was so cozy and seriously slept all scrunched up like this in Matt’s arms!
As soon as Kylie posted her recipe for caramelized apple crumble bars, I immediately decided to make them on Saturday. I finally used our Pioneer Woman iron skillet, and this couldn’t have been any easier!
We enjoyed our portions with Fage and peanut butter drizzled over the top. It was fabulous!
I met with Kaci and Sara at Barre Belle for another hot yoga class. Matt said I take the same shot every time, but I love this view! Class was phenomenal and just what I needed.
I packed my lunch that I ate in the car before heading home for a much needed shower. I included turkey, Swiss, marinated artichoke hearts, avocado, and spinach to a wrap with carrots on the side.
Once showered, I wore my sweats because it was PJ Day at Bruster’s Ice Cream. You could get a free ice cream cone for doing so, and they asked that you donate to a cause they were highlighting.
I ordered the chocolate chip cookie dough, but I realized they only gave me chocolate chip. It was so disappointing because it was boring, BUT the cone was delicious, and it was free. I was sad not to enjoy what I wanted, but I got over it. 😉
I went to Aldi and Wal-Mart because what’s a weekend without grocery shopping? How do we go through so much food? I think we have gremlins hiding at our home…
For dinner, I made us each a salad with mixed greens, freshly grated carrots, beets, cucumber, scallions, avocado, warmed chicken from the whole bird I had baked, freshly grated parmesan, and dressing. We enjoyed a plate of root veg chips for crunch.

For breakfast on Sunday, I had Fage yogurt, a Kodiak Chocolate Coconut Muffin from Kaci, a little Love Grown apple cinnamon granola, grapes and blueberries, and drizzled peanut butter. Matt had a bowl of savory oatmeal.
I got myself ready and once again met Kaci and Sara at Barre Belle for BUTI. I had never taken it before, but it confirmed I’m not much of a dancer. It combines cardio with hip movements, elements of Barre, and yoga. I still enjoyed it! We decided to get brunch/lunch together at Wild Love Bakehouse. It had been too long since I’ve gone!
How does one even begin to make a choice with all these delicious baked goods?
Since I couldn’t eat them all, I went with the veggie focaccia that includes beet hummus. I also had an iced latte. Kaci and Sara each tried a croissant. I was so torn but ultimately wanted the focaccia. It hit. the. spot.
I went by Trader Joe’s and found two great products: mixed nut butter (!) and everything but the bagel seasoning.
For dinner, I made us each a salad that I sprinkled with the seasoning, freshly grated parmesan, chickpeas, cucumber, avocado, scallion, and the tahini dressing for me/Caesar for Matt.

The theme of my desserts clearly was: eat it out of a tub with chocolate on the side. This had pear, mixed nut butter, and spicy dark chocolate.
While we were at fault for getting into bed a little late, we have neighbors who have no concept of time. They were blaring the TV at 11pm. Sigh.
This morning we each ate the last of the apple crumble bar. I added sharp cheddar and peanut butter to mine. It held me over for about five hours. Whoa!
