Memorial Day Weekend 2018

Well, this weekend was quite the rollercoaster. We enjoyed relaxing downtime, delicious food, and a few lovely walks together, but our sweet Mason took a turn for the worst. I snapped this photo on Thursday after we got back home from his monthly follow-up exam. He received amazing news in that all of his blood work improved and showed we were doing what we needed to in order to keep him well. Unfortunately, he then developed nausea and vomiting and quit eating. Our hearts are breaking!! It was this exact weekend last year when he showed signs of what we later learned was lymphoma in his liver. Sadly, I had to drop him off this morning for IV therapy and more tests after a rough weekend. Please keep him in your thoughts and prayers.

Friday

My Friday outfit, and I’m hoping to continue to incorporate blazers into my wardrobe. They are fun to wear and give you a sense of success. 😉

Breakfast was quite delicious! I combined peanut butter powder, cinnamon, nutmeg, and vanilla with Fage plain Greek yogurt, spread it on toast, and topped with apple slices. On another slice of toast, I topped with avocado, apple, tahini, and maple.

Enjoy Life Foods sent my clinic some samples for patients with allergies, so I tried one of the bars for an afternoon snack. It’s quite sweet but tasty.

Matt and I have started touring some homes as we are hoping to find our first place later this year. We currently rent and are ready to take the next step. It’s definitely proving to be a learning lesson for us as we learn to communicate and compromise better. I loved aspects of this house, especially this tile floor (!), but it wasn’t right for us.

Dinner was frozen tri-rice blend from Aldi, roasted cauliflower seasoned with manchego herb seasoning, and baked chicken thighs with roasted pepper spread.

For dessert, I had yogurt with thawed Wyman’s of Maine mango berry blend, coconut Qia cereal, and peanut butter.

Saturday

I got up a little early on Saturday and enjoyed hot oatmeal made with milk and topped with banana, cinnamon, peanut butter, peanut butter granola, and maple.

I tried to make sure I wore some patriotic colors over the weekend. I went to Wal-Mart for a few things and picked up the latest The Pioneer Woman magazine and this novel. Ree’s magazines are my favorite, and so far, the book has me hooked!

 

Given sweet Mason wasn’t well, Matt and I chose not to go to the lake house. We treated ourselves to a lunch date at Zoe’s. I copied him and got the steak skewers with slaw and baked falafel. Man oh man this meal was fantastic! So many flavors and textures. I finished it all except for the second skewer, and I felt pleasantly full.

We drove around and looked at some homes we had seen listed for sale on our Zillow account. Then we made our way over to Kaci and Drew’s. Drew and his dad built this floating deck, and they wasted no time getting an ah-dorable rug, table, lantern, poof, and chairs! I’ll be parking my toosh here often. On Sunday, they bought a grill too. Hello summer and enjoying meals outside.

Kaci was super sweet and gave me a bottle of her cold brew, so I made myself a small glass once we were home.

Matt and I went out for a walk and got caught in the drizzly rain, which was actually really fun! Felt like being a carefree kid.

Once back home, we enjoyed open-faced salmon burgers on GF corn English muffin with wilted spinach, local tomato, and Dole’s ‘Slawtastic’ slaw kit in a bag. We loved it! Very flavorful.

Mason came down while we were eating, which gave us relief. But then he got sick on the food he had eaten three hours prior. So it was back to the Animal ER. They gave Mace subcutaneous fluids, an IV anti-nausea med, and they sent us home with probiotic powder and an anti-diarrhea med.

We brought our sweetie back home and hoped he would perk up a bit. He tried eating a little, but he just couldn’t bring himself to take more than a few bites.

Sunday

I was craving more toast, so I had simple avocado toast on one slice and peanut butter, cinnamon, and halved green grapes on the other. I removed three slices of avocado because as I was eating it, I realized it was quite a lot for just one slice of bread. Whoopsies.

For lunch, I had a bed of organic greens with some of the tri-rice blend, mozzarella, cucumber, carrots, hummus, and Red Hot Blues tortilla chips.

I put myself together, and Matt and I set out on a walk. We saw a sign for two open houses, so we thought we could walk to them. After sweating our butts off walking along a curvy road with no sidewalks, we decided to head back home to get the car. I’m sure the drivers who passed us thought we were super bright. Lol

We did make it in time to see the house, which was well-above our price range. But honestly, neither of us liked it. The sweet realtor actually recognized Matt from attending a four-wheel drive meeting at least ten years ago! Matt is not a face or personality that is easy to forget. We had a fun time chatting, and then we went and filled up my car for $0.40 off / gallon. Woot!

I went to Ingles to get Mason a rotisserie chicken because we were really desperate for him to eat. Normally he loses his mind over any and all baked chicken and meats, but he barely ate it. We kept trying to offer different foods, but he was just not interested.

Dinner was a collaboration with me making the fries and vegetables, and Matt made the hamburgers. Hamburger patty over wilted spinach with spicy brown mustard, tomato, bread and butter pickles, perfectly baked fries with manchego herb seasoning and ketchup for dipping, and sauté-steamed broccoli and cauliflower pearls.

Matt enjoyed his on a GF corn English muffin with a kosher dill pickle spear on the side. He loves kosher pickles without dill, but I can never find them! Tell me: are you team kosher, dill or bread and butter? I love dill, but I think bread and butter are my fav.

We watched two episodes of Marcella and then hit the hay.

Monday

I came up with this breakfast, which was simple, but we both loved it. Hilary’s vegetarian sausage patty with cheddar cheesy scrambled eggs, and grapes for me while Matt had an apple.

After sipping coffee, cleaning, and showering, I had my leftover steak over wilted spinach, slaw, and avocado toast for lunch (used the avocado I had removed from my toast). I used the two sauces Matt and I chose to put over the toast and steak.

I noshed on an apple with dark chocolate hummus for dessert.

I enjoyed a hot mug of Earl Grey with honey while I read my novel. My snack was simple: Red Hot Blues with salsa.

My entry to Banza’s May contest included their elbow pasta; roasted asparagus/onion/zucchini tossed with olive oil, Italian seasoning, rosemary, smoked paprika, salt, pepper spice blend, and garlic herb seasoning; roasted mashed garlic, sauté-steamed broccoli and cauliflower pearls, roasted pepper spread, and hemp hearts.

Matt and I went on about a 30-minute walk after eating our dinner, and it was nice and cool by that time. Walking is one of my favorite ways to decompress and clear my mind.

Love him so much. Sadly, we (I) have allowed early house-hunting to cause arguments, but I wouldn’t want to do life with anyone else. Just another life experience to be had.

Once he was showered, we made our evening snack and watched the final episode of season one of Marcella.

Kaci and Drew have been hard at work cleaning and reorganizing the lake house. They sanded and painted our older patio furniture to breathe new life into it, and they strung these adorable lights along our deck! So gorgeous. Kaci sent me these photos, and I can’t wait to spend some nights out there.

Tuesday

Today I enjoyed instant Ancient Grains oatmeal made with milk, cinnamon, cardamom and salt; Wyman’s of Maine berry plum cherry cacao nibs warmed into it; topped with honey and peanut butter.

I dropped Mason off on the west side of town and then made my way back over to my clinic closest to our house. It’s days like this that I’m glad I drive a fuel-efficient Prius. I’m so hoping to get a call soon with a positive up date on Mason. I hope everyone has a great week ahead!

    I’m so so sorry to hear about sweet Mason. Ugh, I’m sick to my stomach thinking about how you guys are feeling right now. I hope he is doing somewhat better.

    I love Enjoy life products- their little brownie bites and their chocolate morsels are soo good. I’ll need to keep an eye for those bars.

    I have been having a falafel craving lately and this picture just upped it! Mmmmmm!

    Awww you and Kaci are just the prettiest. I love that picture of you two! (and you and matt are the cutest!).

    That combo of PB and grapes looks sooo tasty. I don’t’ know why that combo isn’t a thing- it’s like sweet and savory together. Mmmm! I’ll be trying that very soon.

    I am team Kosher I’d probably say, but I’m not too picky!

    Funny, I always think of you when I get to the end of my peanut butter jars! You always make these concoctions look so tasty.

    1. Thank you so very much, Mackenzie. Unfortunately, Mason just continued to sleep and didn’t want to eat. He was trying to tell us he was ready. So on Wednesday, we had the absolute most caring doctor come to our home, and she helped Mason get his wings. Matt thought he might enjoy being outside one last time, and I can’t tell you how happy we all were when we saw his light up, and for the first time in days, he was happy. He was visibly weak, but he ate so much grass and gave us his lion-sized purrs! When the vet arrived, he greeted her instead of being shy or timid. We feel he truly knew she was there to help him. He gobbled up her treats, and that was my biggest wish: that I could see him excitedly eat one more time. He slipped away from us in the most peaceful way, but I’m really struggling. A part of me is and will forever be gone, and it’s very hard to accept that he won’t be there when I get home. He was my sous chef and professional food photo-bomber for the blog! He was Matt’s pride and joy, and he’s struggling immensely too. We can’t stop from crying, but I keep saving photos and videos to look at as often as I can. Thank you for sharing your concern all of this time. He still kicked cancer’s ass in our book, and he ultimately called the final shot. No matter what that awful cancer did to him, he was our handsome baby boy always.

      I appreciate all of your incredible compliments on my food! It means so much coming from you. I love that you think of me when you have nearly empty pb jars! I think of Mason because he always got the last lick. 😉

      1. Kori, I am writing this in tears for you. I am so sorry, but wow, what you shared about those final moments sound like they could truly not have been better. What a peaceful way to help sweet Mason transition. Thank you so much for sharing this with me. I selfishly feel like I mourning Mason’s loss too because I feel like I knew him through your blog- he always gave me such a chuckle, and talk about a cat with personality!!! I lost my cat of about thirteen years a couple years back and it was one of the most difficult things I’ve eever had to go through. Pets are truly family. It hurts awfully and I am so sorry you both are going through this, but you gave mason the best of life possible. Sending MASSIVE hugs to you, just the biggest- watch out it may knock you over! Praying that each day that passes gets a bit easier.

Thank you so very much for your thoughtfulness, & I just love how Mason’s personality (purrsonality really 😉) shined through on my blog!!! He was our baby boy. Many vets said he was more like a cat-dog because he wasn’t a typical cat. We just adored him. I’m so sorry for your loss a few years ago. Our fur-babies are family, so it is hard. I love that he could be a light to others through this space of mine, & your prayers are so appreciated.
